Sushi Salad  

Sushi is popular even with teens now.  Try them on this salad!       

Everything but the sea weed and the rice!  If you are on Dtox eliminate Salmon

This is a great salad to take to a party of serve to guests but it also very good to make just for you!  Amounts of salad ingredients depend on how many you are serving, adjust accordingly.  Do a taste-test on the dressing with the ginger and the brown mustard and the braggs, to your preference.  The dressing will keep for several days in the fridge.

 

Your favorite greens (no iceberg lettuce)

1 ripe but not mushy avocado, halved & sliced thin

1 Cucumber sliced thin

½ Red Onion sliced thin

Grilled salmon (can be hot or cold)

Orange Ginger Vinaigrette

  • 1/4 cup fresh orange juice
  • 1/4 cup extra-virgin olive oil
  • 1 Tbs grated fresh ginger (preferred) or ¼ tsp ground ginger
  • 1 tsp fresh grated garlic
  • 1 tsp brown mustard
  • 1 teaspoon Braggs Amino Acids
  • 1/4 teaspoon freshly ground mixed pepper (not black)

Combine all ingredients for dressing, set aside

Combine all greens, onion and most of cucumber and avocado in large bowl, pour vinaigrette over and toss well so all is coated.

Put salmon in the middle, arrange remainder of avocado, cucumber and onion on top for an attractive presantation.  Also looks great in a bed of crisp Romaine or leafy lettuce leaves.
