Chopstick Salad
Adapted From Publix Market Recipe card

This was a sample at Publix. I loved it and adapted the oils, soy sauce and vinegars for flavor and health. My husband loved it (I was amazed) he said he would eat it every night!
Ingredients
½ cup soaked almonds, sliced or chopped
1 Tbs sesame seeds, soaked
3 green onions, chopped
¼ cup red wine or rice vinegar
1 Tbs Tamari or Braggs Amino Acids (no msg soy sauce)
½ cup EV olive oil or grapeseed oil or sesame oil
1 12 oz package broccoli slaw
Instructions

Toast Almonds and Sesame Seeds by cooking in a large sauté pan on low for 4-5 minutes, stir occasionally until toasted

Slice green onions thin

Whisk oil, vinegar and soy sauce and stir in onions, almonds and sesame seeds

Pour over broccoli slaw and stir until evenly coated.
Tips
Will keep for 3 days, best when fresh! You can just make the dressing and add it each time you want the slaw.
Also good with some fresh pineapple
Creamy Cucumber Dressing
Keep on hand as a dressing for salads or a veggie dip!

Ingredients:
1 small cucumber, peeled and cut into chunks
1 avocado
3/4 cup cilantro leaves and stems (don't pack it too tight) You can substitute Flat Leaf parsley
1-2 green onions
3-4 fresh basil leaves (I leave this out)
1/4 c flaxseed oil
1/4 c (or less) olive or grapeseed oil
2 T Raw Agave Nectar or Raw Honey
2 T Raw Apple Cider Vinegar
1 tsp Celtic Sea Salt
1 tsp fresh dill or 1/2 tsp dried dill
Instructions:
Place in blender or food processor, blend until completely smooth and creamy.
Good on fresh spinach, as a veggie dip and on veggie burgers.
3 Minute Salad
This will last 2-3 days and is an instant hit with just about everyone.
Ingredients:
2 Bags of RAW stir fry veggies (variety of carrots, broccoli, snow peas, etc)
Sulas dressing or your favorite vinaigrette (no EDTA or HFCS please)
Sula's Dressing
4 Tbs flaxseed oil
1/4 c lemon juice or braggs raw apple cider vinegar
3 Tbs Raw agave nectar
1 Tbs minced garlic
1 Tbs minced onion
Put into a glass jar and shake well before pouring over veggies or salad
Instructions:
Pour Sulas dressing over veggies, stir well.
Good to add some peppers, red onion or cherry tomatoes too! Serve w/ some lettuce or some cooked Qunioa as a pasta-type salad. Yummy!
